Saison aged for 18 months in a large-format French oak wine barrel on Riesling lees. The extended barrel maturation imparts a silkiness and delicate oxidative warmth while the lees contribute subtle floral and stone-fruit complexity. Late in the 2025 hop harvest, Fleur de Lie was fresh-hopped with a generous charge of sticky Nelson Sauvin straight from the bine, then rested on the hop for a month to marry tannic, resinous lift with bright, sauvignon-like tropical and white grape aromatics. Finally conditioned in can to preserve its lifted aromatics and layered texture. The result is a refined, cellar-worthy farmhouse ale: elegant oak-derived spice, lees-driven depth, and a vivid Nelson Sauvin signature of white grape, passionfruit, and green peppercorn—lively, complex, and utterly drinkable.
