Inspired by the age-old practice of flor aging—where a delicate veil of yeast forms on the surface of wine in not-quite-full oak casks—they set out to explore a different way to mature their skin-fermented Sauvignon Blanc. After primary and malolactic ferment, a portion of the 2022 Sauvignon was racked into two seasoned 260‑litre barrels and deliberately left with a small headspace. There, with just a whisper of oxygen and time, a soft veil developed and the wine began to evolve in surprising, elegant directions.
The result is our Veil: a wine that balances the bright, textural vitality of skin contact Sauvignon with a savory, nutty lift and saline clarity imparted by oxidative aging. Aromas of baked citrus peel, bruised apple, and warm brioche reveal a subtle undercurrent of dried herbs and sea spray. On the palate, the wine presents fine-grained texture, gentle tannic structure and a long, mineral finish that lingers with citric brightness tempered by toasty complexity.
